Crown of the Great Lord is for fashion, and I think you'd like the Knight Set.
Wolf Ring is for Poise, you can tank through basically everything except maybe Black Flame and Ultras.
Havel's just helps to keep the weight down a little, you can swap for like Lingering Dragoncrest Ring, Hornet Ring, etc and still actually Fast-Roll. Keep the ring-setup thought if you want to Fast Roll, Swap to like Hornet Ring or Lingering Dragoncrest Ring if Med-Rolls are okay for you.
Your Baemore is here, buffable with Way of the Weeb of course. It adds 361 magic damage so overall AR is 677 before resistances. You can use either a Divine Dagger or Divine Rapier if you want for ripostes. Small Leather Shield a good Parry Shield, and Canvas Talisman has the highest magic adjust for your 30 faith. If you wanna adjust this for your personal use, go ahead.
I tried to balance out Endurance and Vitality while still giving decent damage, but it IS SL68, idk what good invasion level is but it varies from location to location in 1v1s/fight clubs (for example, "Anywhere from SL80 to SL120 will see a good amount of combat in the forest."
