Tactics:
Giantdads = Poke and Taunt with Demon's spear, then you go for the Flamberg combo (R2>R2>R1), and dont worry, you'll stun him first as long as you hit first with the combo.
DMB Katana/Falchion = Keep poke and taunt until you get used to their moves, and dont worry they cant parry you as long as you hit them with only the tip of the spear. If they get aggressive, twohand and hit them first with the combo.
Anal Darkbeads = Use strong magic shield, it wont drain your stamina when u block, then just backstab them.
