This is the sorcerer build I'm making, which is mainly for PvE, cause I'm not much of a PvP guy, but it should work just as well for PvP I suppose. I'm only doing this build to test out sorcery in Dark Souls as this is my first Sorcerer I'm playing as. As you can see I'm in the WoW covenant because like I said, I'm not in it for PvP. But DSR makes it easy as hell to change covenants, so for you it's whatever. The spells are all pretty simple. For regular enemies you might want to swap one of the Soul Spear slots for Great Soul Arrow or two slots for GHSR, if you can stand (and survive) the slow casting speed. You will be able to fastroll like a boss with this kit, and you can always swap out the flip ring for anything else, but I always like to have the Bellowing Dragoncrest ring equipped. When it comes to weapons I like using Logan's catalyst for the most part, but you can always switch it out for the Tin Crystalization Catalyst for that crazy high Mag. Adjust. With shields, I like using the Balder Shield because it looks good and has good stats. At +10 it has stability equal to the weaker Greatshields, and you can definitely get it up to +14, as long as you don't waste a precious slab on a damn shield. for my primary blade I'm using the Balder Side Sword +15 because it's simply just a great straight sword with a good moveset and low stamina usage. The other sword I'm using is the Magic+10 Estoc. The Estoc has amazing hidden Critical potential, making it great combined with the Hornet Ring in PvP, and in PvE, uh... Gwyn, I guess? But I like it, it's a fine thrusting sword. And the third blade in my arsenal is the sexy Moonlight Greatsword +5, this bad boy needs no introduction, but good luck chopping Seath's tail off. And that about rounds it off for the build. You could definitely go for some more points in Vitality. And starting off, I would not recommend trying to level-rush your Intelligence, you don't need too much early on, your equipment helps you out.
