Revised version of the slow-walk build - trades about 100hp to get enough strength to use havel's greatshield, which overall should save a ton more health in the long run.
Surprisingly viable in 1v1 PvP, when used well of course.
Stone greatsword 2h r2 holds people down up close, butcher knife standing 1h r2 gives you much longer reach/minor movement. Both weapons are good damage and poise break. Havel's shield allows you to put up a wall that few weapons can actually breach. Iron flesh and havel L2 for further fortification if you have to tank up, combustion (regular, for 16 casts) gives you decent damage in non-parryable form, and black flame gives you strong poise damage to help build stunlocks and interrupt bleed and shotel R2 users.
Bring lots of repair powders to keep the greatsword buff doing. Dung pies and poison throwing knives allow you to capitalize on longer battles by making waiting less viable. Black firebombs allow additional damage from a distance, and green blossoms allow your already-strong defensive position to be nearly-immutable with additional stamina. Keep red moss at the top of your item list for emergency use against bleed users.
